10oz (285g) pack of frozen spinach, thawed and squeezed dry
1 cup (165g) cooked brown rice
1 egg lightly beaten
2 sliced hard boiled eggs
1 tablespoon of vegetable oil
Method:
Preheat the oven to 180 degrees C (350 degrees F)
Place the turkey or chicken , spinach, brown rice, vegetable oil and beaten egg into a large bowl and mix thoroughly until combined.
Place half the mixture into a greased and waxed paper lined 9 inch (22.5cm) cake tin.
Layer the hard cooked egg slices over the mix then top with the remaining meat mixture.
Place into the preheated oven for 45-50 minutes or until firm and cooked.
Remove from the oven and leave to rest in the cake tin for at least 5 minutes.
Using a spatula, remove carefully from the pan, drain off any grease and allow to cool for approximately 15 minutes.
You can then cover it with frosting, made either from mashed potatoes or a soy based cream cheese (using an icing bag if preferred to decorate the cake)
