EASTER BUNNY PUP CAKES

Ingredients:

½ cup of all purpose flour
1 cup of whole wheat flour
½ cup of cornmeal
1 teaspoon baking powder
1 teaspoon molasses
¼ cup of honey
1 egg
1 cup of water
½ cup of finely diced cooked chicken

For the icing:

8 ozs low fat cream cheese
2 tablespoons of honey
Large tablespoon of vegetable oil

Extras required:

Cupcake papers or one large cupcake baking holder

Method:

Preheat oven to 180°C (350°F / Gas Mark 4).

Place all the flour, cornmeal and baking powder in a large bowl and mix together. Next add to this the molasses, honey, egg and water and mix together well for two minutes. After this add the diced chicken to the mixture and combine well. Put the mixture into cupcake papers and bake for 20 - 25 minutes

For decoration:

Once cooked let the cakes cool and then gently slice across the top of the cake about one cm in depth, then cut the slice in half and then place the two pieces vertically into the top of the cake AFTER the icing has been applied. This will make two cute bunny ears!

For the icing topping:

Mix together the cream cheese, honey and vegetable oil until it forms a frosting like consistency. Place a little of the icing mix on top of each cake and smooth out.

Place the bunny ears into the top of each cake. Perfect for an Easter treat.
