BARKIN' BIRTHDAY CAKE

Ingredients:

  • 1lb (450g) minced turkey or chicken
  • 2 diced carrots
  • 10oz (285g) pack of frozen spinach, thawed and squeezed dry
  • 1 cup (165g) cooked brown rice
  • 1 egg lightly beaten
  • 2 sliced hard boiled eggs
  • 1 tablespoon of vegetable oil

Method:

  • Preheat the oven to 180 degrees C (350 degrees F)
  • Place the turkey or chicken , spinach, brown rice, vegetable oil and beaten egg into a large bowl and mix thoroughly until combined.
  • Place half the mixture into a greased and waxed paper lined 9 inch (22.5cm) cake tin.
  • Layer the hard cooked egg slices over the mix then top with the remaining meat mixture.
  • Place into the preheated oven for 45-50 minutes or until firm and cooked.
  • Remove from the oven and leave to rest in the cake tin for at least 5 minutes.
  • Using a spatula, remove carefully from the pan, drain off any grease and allow to cool for approximately 15 minutes.
  • You can then cover it with frosting, made either from mashed potatoes or a soy based cream cheese (using an icing bag if preferred to decorate the cake)
